The other morning I was really in the mood for some crepes. I have no idea why but I just felt like making some and to be honest I have never made crepes before. So , after a little bit of research I came up with this recipe. It is gluten and dairy free recipe and I am thrilled with how they turned out. They are a smidge heavier than your normal crepe but none-the-less they tasted really yummy topped with some berries and a little bit of chocolate sauce. I hope you like them too.
What you need
2 cups sorghum flour
3 TBS tapioca flour
1 1/2 cups milk
2 TBS coconut sugar
2 TBS flax seeds
pinch salt
What to do
- Put all ingredients into a blender and whiz up until smooth. You need the batter to be quite runny so if you need to add more milk then do so. Only add a littl at a time so as not to make it too runny.
- Heat frying pan, the size of the crepe you desire, over a medium heat and pour enough batter into the pan to cover the bottom. After about 1 minute flip the crepe over to cook the other side. Use a olive oil spray to coat the pan after each crepe so they do not stick.
- Repeat for the rest of the batter.
- Serve with your favourite fruit topping
