This ice cream is so creamy and delicious. And the chocolate topping gives an extra touch of indulgence.
Freeze bananas which are overripe. Break into pieces and place in a freezer bag. Use as needed.
What you need

4 frozen banans*
1/4 cup coconut oil
1/4 cup rice malt syrup, honey or maple syrup
1 TBS cacao powder
What to do
- Place your bananas in a food processor. Leave to defrost for 5 minutes.
- Put the lid on and turn your processor to high. Whiz for 3-5 minutes. Check after 2 minutes. You are looking for the bananas to turn into a smooth and creamy mixture. Once they are creamy do not over mix.
- Place the remaining ingredients into a glass jar and shake well until completely mixed together.
- Serve your ice cream in a bowl and drizzle over a little chocoalte topping. You do not need too much topping as it is very rich in taste. The coconut will harden and the cold ice cream creating a hard topping. YUM.
- Serves 2-3 people
*You can also add other fruits to the banana ice cream such as strawberries, raspberries or blueberries. Adding a little vanilla essence and coconut cream makes this ice cream even tastier. You can also grate in some dark chocolate and add a touch of peppermint essence for mint chocolate ice cream. Experiment with your ingredients to find the taste you love.
